Candied Citrus Peel
I got this recipe from a video about candy in the 18th century by Townsends. I made a small change at the end so the end result isn't too sticky.
Ingredients
- 5-7 lemons (or the equivalent in your citrus of choice)
- 1 cup of sugar
- 1 cup of water
- More water
- powdered sugar
Kitchen Tools
- 1 Pot (Hopefully a big one)
- 1 Wooden Spoon
- 1 cup
- 1 plate
- 1 bowl
Recipe
- Cut your lemons or citruses into cicular slices.
- With a sharp knife separate the peel from the interior of each slice.
- Put the peels in a bowl and soak them in water. Keep them like that for 2 or 3 days.
- Mix the cup of sugar and the cup of water in the pot.
- Add the peels to the mix.
- Boil them for around one hour.
- Take them out, put them in a plate and let them cool a little bit. (You can store the syrup made as a byproduct in a glass container of your choice.)
- Put the peels in a bed of powdered sugar and coat them until they are no longer sticky.
- And that's it!
Aditional Tips!
This is a really good way to use lemons that are about to go bad. Personally I like to freeze the interior of the lemon slices to make "lemon ice cubes". Just to make some funky water from time to time.
If you use old peels they will be a little harder than if you use fresh peels. But they are still great.
