Fried Rice (2 servings)
Ingredients
- 2 cups of cooked rice (left for at least one hour)
- 3 eggs
- 2 green onions
- soy sauce
- oyster sauce
- a diced vegetable (optional but super recommended)

- 1 Wok
- 1 Cup
- 1 Wooden Spoon
- 1 Microwave (optional)
Recipe
- Cut the white part of the green onions and dice them. Save the green part in the freezer (can be used in other recipes later)
- Put some oil over low heat in the wok and once its hot then add the green onions (I like to throw a small piece of green onion just as I turn the heat on. When it starts sizzling then I add the rest.)
- Cook the green onion for 2 or 3 minutes. When it starts smelling good.
- Put the rice in the microwave for 1 minute. So its not a solid block, makes it easier to mix later.
- Put the green onions to one side of the wok and add the eggs on the other side. When you add all of them scramble them. After they are scrambled in their side of the wok then mix them with the green onion. (Try to scramble them until they are no longer runny).
- Put the green onions and eggs to one side of the wok. Add two spoons of soy sauce (or eyeball it, its more fun that way). Then add the rice before the soy sauce evaporates. Mix it with the rest of the ingredients.
- Add the diced vegetable from before. If you don't have one ignore this step.
- Add 2 spoons of oyster sauce and mix mix mix! (until all ingredients are incorporated)
- Keep mixing every now and then. The more time you leave it in the wok the dryer it gets. Adjust this part to your preference, taste it until you think its good enough. (I leave it for 5 minutes, that's how I like it)
Aditional Tips!
Fried rice is really good to remake leftovers. If you need the leftover to be cooked add it after the eggs. If its ok to eat raw then you can add it after the rice for some texture.
I usually make a lot of rice every sunday so I always have something to eat even if I don't feel like cooking. White rice lasts almost a week in the fridge without going bad.
My fastest recipe is rice with canned tuna. Rice in a bowl, microwave for 1 minute, canned tuna goes in and done. Easy dinner for emergencies.
