"Semola con Leche" is a simple and sweet chilean dessert (the direct translation is "Semolina with Milk" I think). For 4 portions, here is what you need

Ingredients

Recipe

  1. Add the milk, sugar and cinnamon in a pot and mix
  2. Warm up the milk on medium heat to around 85°C (steam and some small bubbles can be observed but its not boiling)
  3. Set the oven to low heat
  4. Add the semolina one spoonful at a time and gradually, if you just let the semolina fall you will get lumps which is not what you want. Shake the spoon to let it fall while mixing, and that way you will get minimal lumps. (You don't need to be ultra careful, just don't drop each spoon of semolina in one go)
  5. Once you added all the semolina mix for one or two minutes. The consistency of the mix will change from liquid to something like a thick paste.
  6. On your container of choice (which will contain the semolina), make a bed of syrup.
  7. Empty the semolina over the bed of syrup
  8. Cover your container and let it rest for 2 hours.
  9. And done! You can eat a portion right away or put it in the fridge for later!
